I am trying to mix it up a bit with snacks for packed lunches, and picky dinners for the kids. They get bored of the usual so quickly and Charlie comes home with a lunch box which has barely been touched and is absolutely ravenous .
The pair of them went mad for these chest delights and once slightly cooled but still warm from the oven I they could demolish way more than they should . Picture yourself sitting in the garden on a balmy summers evening with a bottle of cider and cheese straw accompaniment ( whilst reclining on your new Rattan sofas which the the courier seems to have lost in transit !!!) Sounds like bliss. but clearly a dream right now as it’s chucking down with rain. Summer and cold drinks are nowhere to be seen!
What makes these straws extra cheesy and yangy is the feta – sounds weird but is amazing!
120g butter, softened
450g grated Cheddar
250g plain flour
1 teaspoon salt
1 teaspoon Dijon mustard
1/2 teaspoon salt
100g grated feta
1 tablespoon fresh thyme
Preheat the oven to 200 degrees centigrade
Bung all ingredients into a mixer and blend well
Put some flour on your worktop
Roll to about 1cm thick and cut whichever shape you like
Place in the oven for 10-15 mins
