Just a quickie for today – 

I love tahini, it’s so versatile. I was messing around with ingredients we had in the cupboards. And never really thought about adding it to soup. However, this weirdly works and adds something a bit different to soup.   

Olive oil

1 can of chopped tomatoes

1 large red onion chopped 

1 large red pepper chopped

1 clove of garlic 

2 tablespoons of tahini

One vegetable stock pot 

1 teaspoon smoked paprika 

1 teaspoon chilli powder 

Salt and pepper 

Grab a big pot chop your onions, garlic and pepper fry in olive oil until tender add all the other ingredients and cook on low heat for 5 minutes 

Pour into a blender and blitz until smooth 

Serve piping hot.
