Bit late to posting – should have been a Valentine’s Day recipe. But I am lacking on the energy front! Chocolate fondants always sound so fancy and complicated but not these. You can create them with little effort and really impress loved ones. Nothing in the world beats melted chocolate but then when you combine it with warm chocolate cake it’s a match made in heaven. I don’t really make stuff like this too often and they blew the kids minds away. Put aside 5 mins prep time and 15 mins cooking and voila!
Makes 4
2 whole eggs
2 egg yolks
100g 70 percent dark chocolate
1 tablespoon golden syrup
12 pieces chocolate of your choice
100g butter
120g sugar
4 teaspoons cocoa powder
100g plain flour
1 teaspoon of coffee granules made up with a small amount of boiling water
1/2 teaspoon salt
Preheat oven to 180 degrees centigrade
Melt the butter in the microwave for 1 min 30 secs approx
Break the 100g chocolate up ( not the 12 pieces) and add it to the butter. The heat of the butter will melt it. Stir until liquid. Add the golden syrup and mix well
Add the liquid coffee
In another bowl – Mix together the sugar and eggs well – I use my stand mixer
Then add the flour – mix together.
Keep the mixer on add the chocolate mixture and mix for a good minute
Grease 4 ramekins
Get the cocoa and coat the inside of each
Grab a tablespoon and add one spoonful of mixture into each ramekin and then add the 3 chunks of chocolate. Top up with mixture to fill each ramekin
Place in the oven for 15 mins
Leave to cool for 10 mins so not too “cakey”.
Dust with icing sugar and enjoy!
