Don’t you just love a one pot dish that takes seconds to throw together but tastes really delicious and looks like you have been slaving for hours in the kitchen! If so, this is one is for you! I know there will be a cohort of people who don’t agree with sweet and savoury being mixed together to form a main meal. To them, I say I, yes i largely agree but open your hearts to this recipe it’s proper lovely, warming and extremely kid friendly due to the sweetness of the apricots. Don’t be worrying about the alcohol and kids, it will have evaporated leaving behind a lovely tangy flavour!! As my son asked, “ is this comfort food?” To which I replied “absolutely”!!!!!
3 chicken breasts
1/3 bottle of white wine
1 heaped tablespoon flour
30g butter cut into little Cubs
1 clove finely chopped garlic
1 can of apricots with juice (not syrup)
Large handful of dried apricots
1 chicken stock pot
Salt
Large pinch of mixed herbs
Preheat oven to 180 degrees centigrade
Get a big pot you can put in the oven
Cut the chicken breasts into small pieces add to the pot
Sprinkle flour on to the chicken
Add the can of apricots and juice, dried apricots, white wine, stock pot, salt, herbs and butter
Place in the oven without a lid for 55 mins
Serve with rice and veggies
