One of my favourite weekday lunches when I am home alone, and feel guilty for all the junk I have consumed. Super quick, super tasty and super umami

Pack of tender stem broccoli

Roasted mixed seeds

Heaped tbsp Tahini

Lemon juice

Fish sauce 


Steam broccoli 

In a jug mix together tahini, a few drops of fish sauce (to taste) and juice from half a lemon. 

Use a fork to break up the tahini as it’s quite sticky. Once everything is mixed well add water to loosen it to the texture you like 

Dish up the broccoli, drizzle over as much dressing as you wish and then sprinkle with roasted mixed seeds

NB for the seeds dry fry them in a none stick pan – but keep watching as they can become burnt very quickly. Sunflower sesame or pumpkin seeds will all work fine individually
