First things first – I am sure you can see I love a traybake!!!

I mean it’s like blinking winter out there, freezing, rainy and miserable. The kind of day you want to sit in front of the fire drinking tea and eating biscuits! The next best thing is something warm and comforting to eat. Tuesdays are always busy with football, Scouts and Rainbows so it’s nice to have something you can bung in the oven quickly, made from scratch that tastes good and satisfies you.

I love looking in the frozen herbs and veggies section on Tesco’s online. They have great stuff like avocado halves, pomegranate seeds, lemon zest! Right now I am loving the bags of frozen roasted veggies. They taste really lush and so blinking easy and at £2 a bag, for the basis of a meal I think it’s fab,

Give this traybake a go if you need something that takes minutes to prepare I promise you will love it!

1 bag of ready chargrilled roasted veggies

2 small baking potatoes 

A load of olives

1 heaped teaspoon mixed herbs 

1 tablespoon smoked paprika 

1 bag kebab Oumph!

Big grind of salt and pepper 

Drizzle of olive oil of spray of fry light.

Large crumbling light or normal feta or dairy free cheese or indeed none of the above if you so choose

Preheat oven to 170 degrees centigrade 

Get a large baking tray where everything can lay flat, not heaped up or it won’t roasted just boil 

Chuck all ingredients on use your oil to coat the top 

Sprinkle on your herbs and seasoning and each in the oven for 50 mins. 

Crumble over feta on top and serve
