The title for this recipe is a bit of a mouthful but I was a little unsure as to what it was! Do you sometimes grab a load of ingredients together and hope for the best? This is a little of what went on here last night. I have to say though, this is quite lush and relatively low in calories. I seem to be going through a lack of inspiration in my cooking at the moment. I go through these patches and come out of the other side with loads of ideas. I hope you like this!
Preheat the oven to 180 degrees centigrade
2 packs reduced fat mozzarella
1 pack of Oumph kebab (vegetarian plant based thing)
1 carton pasata
1 tablespoon capers
Large handful of olives
A few drizzles of balsamic vinegar
1 large red onion
Tablespoon mixed dried herbs
1 tub of tomato and herb quark (I get it from Tesco’s)
1 block precooked polenta cut into slices
Grab a flat roasting tin
Place the cut up polenta on to the bottom
Chop and fry the red onion. Once cooked but to one side
Spoon the quack on top of the polenta, spreading it and creating a layer
Add the cooked onions
Then pour the pastata over the top – you may not need all, so it forms another layer.
Drizzle some balsamic vinegar on top
Add your oumph
Sprinkle some salt and pepper over
Cut your mozzarella in to pieces and place on top
Add the olives, capers and herbs.
Bake in the oven for 45 mins
