Not a lot to say about this one, just a salad I make now and then during the summer. The kids like the halloumi the most and the butternut squash the least! My husband takes it in his lunch box to work. It keeps in the fridge for a few days.
200g bulgar wheat
1 butternut squash cubes and cooked in sesame oil in the microwave until cooked.
1 Teaspoon roasted cumin seeds
1 teaspoon cinnamon.
Coriander
Sesame oil
Fish sauce
Soy sauce
Salt and Pepper
Place the bulgar wheat into a big low bowl add a glug of fish sauce, soy sauce and cinnamon
Add just enough water to cover then place a piece of cling film over the top
Once soft remove the cling film, add the butternut squash roasted cumin, chopped coriander and glug sesame oil over the top.
Meanwhile fry some halloumi until browned
Serve in individual bowls and place halloumi on the top.
