I think most people with young kids eat a lot of pasta, it’s so versatile and children never seem to tire of it.

Charlie’s fav pasta he likes to make himself is tuna penne with olives and cheese. Poppy’s all time fave is spaghetti and meatballs. And me you may ask, I love tagliatelle with a creamy sauce.

I think I created this dish because Poppy is mad about broccoli and chicken. I mean, I say created, I just chucked a load of things together.

So I won’t give quantities as it’s so straight forward,  you know how much pasta you like, how much chicken and how much broccoli you want to use for the size of your family.

A guide would be for 4

3/4 of a standard pack of pasta – I like Penne or the shells for this.

2 chicken breasts, cooked and cut into small pieces

A packet of tender stem broccoli

Loads of grated cheese

Salt and pepper to taste

Cook the pasta as you usually would, you can cook the broccoli in with it if you want to save washing up.

Drain the pasta keeping a few spoonfuls of the water aside. Stir in the great cheese, you need loads because that’s what makes the sauce. If you like it use Stilton instead of cheddar.

Pour in the water from the cooked pasta

Then add the broccoli, chicken, salt and pepper – taste and add more cheese or seasoning depending on your taste.

Super quick and super simple.
