A nice winter warmer.

Who doesn’t love a jacket potato or any potato related product? I don’t think we have them nearly enough round here.

We love them, potatoes, butter and cheese –  so what’s not to like about this dish!

So simple and you can add whatever you like.

It’s not even a recipe really, more an idea.

Nice Maris piper potatoes – as they go super fluffy on the inside and crispy on the out.

Butter

Cheese of your choice

Salt pepper

Olive oil.

Cut the potato into thin slices that don’t quite reach the bottom.

In each section place a bit of butter then add a piece of cheese, cheddar, Stilton, mozzarella whatever you like.

Place on a baking tray glug a bit of olive oil on top, sprinkle salt and pepper on the top

Bake at 180 degrees until the potato is cooked through.
