My fav thing to make are one pot wonders – saves on the washing up and there is something really satisfying about bunging all ingredients uncooked together in one place. Shove it in the oven and then end up with a really yummy tasting dish 

We eat loads of beans and the kids love them. I always find most things you make with pulses end up tasting delicious.  I never buy dried beans, I know they are probably cheaper and it’s more environmentally friendly but I use cans for convenience and one pot meals tend to be at the end of the week when I have run out of shopping!

You could make this in the slow cooker too – in around 3 hours on high I reckon.

I love eating chilli with

Crème fraîche or sour cream – the heat against the coolness of the dairy.  Yummmy!

2 cans cannellini beans

2 cans black beans 

2 cans kidney beans 

2 cans chopped tomatoes 

1 packet of Oumph! (A plant based meat substitute)

2 cloves of chopped garlic 

1 large diced red 

onion 

1 tablespoon cinnamon

1 teaspoon chilli flakes

1 tablespoon bouillon 

1 heaped tablespoon cocoa powder 

1 teaspoon freshly chopped thyme 

1 tablespoon smoked paprika 

Preheat the oven to 220 degrees centigrade 

Grab yourself a large cast iron pot 

Pour olive oil in the pot and fry off the onions and garlic 

Add the spices and Oumph! Then chuck in the tomatoes and all other ingredients.

Place in the oven for 60 mins 30 mins with lid on the 30 mins with lid off.

Serve with tortillas, sour cream, cheese and avocados
