Who doesn’t love an Ikea meat or veggie ball? I do, I do – although I never actually eat them when I go on a shopping expedition there, I max out the time i have browsing around the Market Place and lusting after the things I don’t need and shouldn’t buy. I think I once went in to buy toilet brushes and came out having spent £150 on napkins and candles!
Going to the Swedish shop is a must and grabbing exotic Scandinavian sounding bits and pieces is essential. Meatballs are always on the list though, I am not quite sure what is in them though, and probably don’t want to know. Not eating meat I have now switched to he vegetarian ones and love them. They are chunky and have a great texture. Both varieties go great with my tomato sauce and it is so quick to prep and goes in the oven for half an hour. I serve with pasta and sprinkle with cheese.
As many meat or veggie balls as you like
2 cloves of finely chopped garlic
1 large finely chopped onion
Olive oil
1 can good quality chopped tomatoes (good quality so they don’t taste too acidic)
1 carton passata
1 tablespoon bouillon
1 teaspoon oregano
1 teaspoon balsamic vinegar
300 ml red wine
Preheat oven to 180 degrees centigrade
Gran a cast iron type pot which is oven proof.
Fry the onions and garlic in a little olive oil then add the meatballs, still frozen and all other ingredients.
Place in the oven for 35 – 45 mins keeping the lid off
