I can imagine sitting in a 1950s baby blue and pink kitchen listening to Rock ‘n Roll on the radio whilst eating these cookies. I am guessing they are the type “momma used to bake” – a bit soft with hard bits of chocolate and washed down with an ice cold glass of milk.
I remembered 45 mins before I picked the kids up from school that we had a play date and I always like to have something nice to feed people. It honestly took about 3 minutes to weigh, mix and shape, 10 mins to bake and then we all came home to a house smelling amazing with warm biscuits to nibble on
300g salted butter,
160g light brown sugar
160g normal sugar
4 tsp vanilla extract
2 large eggs
450g plain flour
1 tsp bicarbonate of soda
3/4 tsp salt
400g chocolate chunks or chocolate chips
Preheat oven to 190 degree centigrade
mix all ingredients together in a stand mix or by hand
Roll into balls a bit bigger than a walnut.
Line some parchment paper and space out evenly.
Cook in the oven for 10 minutes until turning golden.
Enjoy with a glass of milk
