I always try to be prepared for after school snacks or if people come over – I freeze cookies if I make a large batch. Partly so I can look like I am a super mum but if I didn’t take this course of action they would all get eaten.
We are big peanut butter fiends in this house putting it in some sweet and savoury things. I usually buy one of those massive tubs of Whole Earth which we get through in a couple of weeks.
These biscuits are really nice when not long out of the oven.
They are great to give as teacher gifts at the end of term, If I do this I flick melted chocolate over the top, just to make them look a little “posh”!
110g dark brown soft sugar
100g caster sugar
115g butter, melted
1 egg, lightly beaten
190g self-raising flour,
180g peanut butter
1 teaspoon vanilla extract
1/2 bag of chocolate chips
Large pinch of salt
Preheat the oven to 160 degree C
As usual, I use my KitchenAid as I am lazy, place all ingredients into the mixer bowl – it takes only minutes for the mixture to form a ball.
Once the dough has taken shape split into even balls depending on the size of cookie you want and get the back of the for to squish slightly down.
Bake in the oven for 12 -15 minutes
