What could be more festive than warm vanilla waffles with cinnamon sugar. These cute little rosettes are eaten all over the world but popular in Scandinavia around Christmas. Super easy to make and even easier to consume. Before you know it – half a dozen have passed your lips without you even realising!! They look complicated but are really not. I only made them for the first time recently but will become a firm, festive favourite in our house.
140g plain flour
pinch salt
2 tsp castor sugar
2 eggs
250ml milk
1 tsp vanilla extract
oil, for deep frying
Mix all ingredients together to form a smooth batter
Heat the oil to 190 degrees centigrade
Heat the waffle iron in the oil for 2 mins
Then dip in the batter but not so it goes over the top – just round the edge.
Dip into the oil for about a minute until brown – they will fall off the iron themselves.
Drain on paper
Dip in cinnamon sugar or sift with icing sugar
Then eat! You can keep them in an air tight tin for up to a couple of days
