I have had a rubbish day today and wanted to cook something quick and simple which is vaguely healthy but also comforting. I am taking part in the #eatcaptureshare winter challenge – I love looking at the amazing pictures people take. Although it puts mine to shame! I hope you enjoy this. Make it vegan with dairy free cheese 

1 sheet ready rolled puff pastry 

6 large red onions 

2 cloves garlic 

Olive oil 

300g small mushrooms

100g goats cheese grated 

Salt 

2 tablespoons fresh thyme

Preheat oven to 220 degrees centigrade 

Cut two onions finely. Add the garlic, thyme and mushrooms to olive oil.

Fry until nicely browned 

Lay the puff pastry on a tray with parchment paper. Score round the inside of the puff pastry with a knife about 2cms in like you are drawing a picture frame.

Brush with olive oil 

Add the mushroom mixture and spread evenly 

Grate cheese over the top 

Chop the onions into ringed whole slices and lay over the top 

Add some salt and pepper and then place in the oven for 20 minutes.
