I needed some orange warmth to enter into my life today. It’s not been the best – sickness bug is still hanging over the house, our hot water and heating are not working and my dishwasher is kaputt.

Although it’s not that chilly outside our house feels cold and with no heating I needed warming through.

I am not a fan of any shop bought soup. This recipe is a nicer, sharper version of Heinz cream of tomato and can be made dairy free easily. This will be made from  stove to table in 15 minutes.

Ingredients 

1 can good quality chopped tomatoes 

1 olive oil

1 tablespoon chopped fresh thyme 

1 crushed garlic clove

1/2 litre tomato juice 

3 tablespoons double cream or dairy free cream

1 vegetable stock cube 

For the croutons

3 slices of white bread crusts cut off and chopped into cubes 

1 teaspoon fresh thyme

1 tablespoon Olive oil 

Pinch of salt 

First fry the garlic and thyme in olive oil then chuck in the can of tomatoes then juice – break the stock cube up and throw it in. Measure out the double cream and add it 

Let this bubble like a cauldron for about 12 – 15 mins 

Heat a frying pan. 

Shove all the cubes oil, salt and thyme in to a bag and schmush together – yes I said schmush! Until all pieces are covered. 

Place into the frying pan until golden brown 

Serve piping hot and place the croutons on top – drizzle with some cream if you wish.
