Day 5 of an ill house – I feel disconnected from the outside world!
It was my husbands birthday yesterday – we are creatures of habit and most years I make him cauliflower cheese. Yesterday was no exception. Charlie said he didn’t like it because he has had it at school before – I told him that mine was not even comparable – I mean I will stop my blog if, at any point school dinners are nicer than my cooking!!

My cauliflower cheese is very quick – prep takes no time at all and it is in the oven for about 30 minutes
1 large cauliflower cut in to small florets
1/2 teaspoon nutmeg
1 veggie stock cube
2 tablespoons of plain flour
75g butter
1 heaped tablespoon whole grain mustard
3/4 pint milk
200g extra mature
cheese
50g extra cheese for sprinkling on top
Large handful of fine breadcrumb (optional)
Cut the cauliflower into florets – place in a large microwave proof bowl, cover with cling film and cook on full power for 10 minutes.
To make the white sauce
Melt the butter in a pan, then add the flour – whisk until you get a dough and keep it moving round the pan to cook the flour through – do this for about a minute.
Then add the milk and the stock cube, stir gently until the sauce thickens – this could take about 5 or so minutes – it will suddenly turn don’t worry. You need to be using a medium flame.
Once it has started to thicken take it off the heat otherwise it will become wall paper paste!
Add the nutmeg, mustard and cheese.
Remove the cauliflower from the microwave put into a a casserole dish.
Pour the sauce over the florets
Sprinkle the breadcrumbs, (if using) over the top and then add the cheese
Place in the oven and bake for 30 mims
