So, it’s coming to that cupboard raiding part of the week, where I bung random things together.  Anything tastes good when you stick it on top of puff pastry doesn’t it?!! Here we go with a really tasty meal everyone will enjoy.  Most of these ingredients I bet you have lurking about  your cupboards.

Stick a bag of lettuce in a bowl, vine tomatoes a drizzle of olive oil. A grind of salt and pepper. Serve with your puff pastry pizza!!

Preheat oven to 200 degrees centigrade

1 jus roll puff pastry sheet

1 punnet of cherry tomatoes cut in half

Half a jar of red pesto

A load of olives

Fresh basil finely chopped – I buy frozen ready done!

2 balls of mozzarella sliced.

Cut your puff pastry into rectangles, the size you want – I do mine the size of a Ryvita.

Score a line 0.5cm round the shape

Crack an egg into a bowl and whisk.

Use a pastry brush to brush egg wash all over

Spread pesto on the bottom

Add your tomatoes, olives and mozzarella. Sprinkle with basil

Place in the oven for 20 minutes
