Nothing beats the smell of freshly baked bread. Other than freshly baked bread with a touch of sugar and cinnamon. When this is in the oven your house will smell like a bakery. I would make it purely for that alone. It’s best eaten warm and would make a great centrepiece for any festive spread!
For the dough
500g strong white bread flour
300ml lukewarm water
21g fresh yeast
50g butter
For the filling
70g chocolate chips
125g room temp butter
1 tablespoon cinnamon
85g light brown sugar
70g chopped pecan nuts
Preheat oven to 180 degrees centigrade.
Place the yeast in a dish with a teaspoon of sugar in a warm place for 15 mins until it bubbles
Use a mixer and add all the bread ingredients together until a dough is formed and knead in the mixer for 7 mins. Leave in a warm place for an hour until doubled in size
For the filling
Mix the butter, sugar and cinnamon together until a paste is formed
Roll the dough until it forms a rectangle and is 1cm thick
Use a spatula to spread the mixture over the dough. Sprinkle over the nuts and chocolate chips
Then roll tightly like a Swiss roll.
Cut down the middle at one end half way down the dough and twist. Do the same the other way and join together to form a ring
Place in the oven for 25 minutes.
