I love anything umami, my favourite pizza is olives and anchovies – the salty richness blows me away. Tapenade is something I can lie in bed and crave! It’s great to eat on toast or fab to rub over the top of white fish fillets and bake in the oven.

It’s expensive to buy and you usually get a tiny amount in a jar. However,  making tapenade at home takes seconds and you can make much  larger quantities.

250g black or green olives

2 anchovy fillets

1 tablespoon capers

4 sundried tomatoes

1 teaspoon fresh thyme

Place all ingredients in a Nutribullet or blender and whizz it up until it’s smooth 

Serve with crusty bread, toast or flatbread
