Come October we eat lots of soup, it’s filling, quick and generally comforting. I am a bit of a soup snob, I never buy it. Fresh ones are either bland and watery and tinned tastes of metal! Yes, I have soup opinions!!
This is a bit random and not your usual combo but nonetheless tasty. I sometimes think we eat weird food in our family.
1 can black beans
Kalamata olives
I carton Pasata
1 red onion
Clove Garlic
Olive oil
Fresh thyme
A stock cube
Grated Parmesan
Fry the onions and garlic until browned, add, black beans, passata, stock cube, fresh thyme, olives and a bit of water to loosen it all up.
Put the lid on and simmer for around 20 mins
Sprinkle some Parmesan on the top
Eat and enjoy.
