Half term seems to be getting the better of me – we have been out and about every day and am not having much time to think about dinner or make it. When we get in the children are starving and if I give them snacks Poppy in particular will not want her supper . So it’s a race against hangry kids! I have to cook something quick and where I can just gather up store cupboard ingredients. Voila – your good, old trusty traybake – who doesn’t love ‘em?!!
1 bag gnocchi
8 sausages / veggie or vegan- skinned and cut into 2cm size pieces.
1 Tablespoon chopped garlic
20 olives
1 teaspoon dried oregano
10 cherry tomatoes
1 large yellow pepper cut in small strips
1 can of good chopped tomatoes
4 tablespoons pasata
Olive oil
1 teaspoon bouillon powder
1 tablespoon pesto
Splash of balsamic vinegar
1 ball mozzarella
50g grated cheese
Preheat the oven to 200 degrees C
The simplest of recipes ever – shove everything (except the cheese and olive oil) in a roasting dish – use a spoon to mix it all round so the gnocchi and sausages are evenly distributed and covered in tomatoes and the other ingredients.
Glug some olive oil all over
Sprinkle the cheese on top, break the mozzarella into pieces and place over
Bake in the oven 46 minutes
