I guess I would describe this is a slightly lighter red cabbage coleslaw. If you are expecting a shop bought flavour and texture this is nothing like that. It’s got a less claggy texture and isn’t as rich.
We often eat this with sausages – my particular favourite are M & S chorizo style, A-MAZING! And flat breads which is my recipe for tomorrow
I reckon you could put some little bits of apple in too. Although it’s a salad I am reminded of winter and Christmas!
I red cabbage
4 large tablespoons 1/2 fat Crème fraîche
2 tablespoons mayo
1 capful vinegar
1 teaspoon cinnamon
Large pinch of salt
10 walnut half’s pan roasted
Finely chop the cabbage so you can separate it into strips
Add all other ingredients and stir together – it’s as simple as that.
To pan frying the walnuts, heat a sauce pan and bung them in fry with no oil until they are a browner colour round the edges – not black.
Serve in a big bowl and enjoy
