39 degrees today – WOW this is bonkers – nobody wants to eat anything hot in this weather so it’s salads all the way!!

I think lots of people make potato salad and have their own recipe. If they don’t – they should – shop bought ones IMHO are gross. They are claggy, full of unnecessary calories and have a weird after taste.

This salad basically takes little time to prep and is ready in the space it takes to boil your spuds!

I don’t eat meat any more so go for veggie sausages but you can’t beat wurst and Kartoffelsalat.  Whether you have it as a side for a bbq or the main part of a meal this salad will definitely hit the spot!

1kg waxy potatoes

3 tablespoons mayo

3 tablespoons half fat

Crème fraîche

2 large gherkins

3 hard boiled eggs chopped

Large handful of finely chopped dill

1/2 teaspoon salt

1 teaspoon German mustard

1 teaspoon white wine vinegar

Boil your potatoes as long as is required before they are soft.

Drain and place in a bowl

Chop the hard boiled eggs  and gherkins finely

Add all ingredients and mix together

Serve with sausages for a German feel!
