My husband has this thing, “mushroom Sunday’s”. As you would imagine the day involves eating something fungus related. Both kids are not so keen. Poppy would eat them if forced to but Charlie, not so likely. He eats pretty much everything else so I don’t really mind. You are allowed to not like some things in life, right?

A typical “mushroom Sunday” menu is only really one of 2 things, mushroom omelette or mushrooms on toast. Don’t get me wrong, I eat pretty much anything. I can’t cope with fussy eating!! Tolerance is a daily struggle! But mushrooms are something I could defo take or leave. I think its more the texture then anything. Not keen on that squeaky thing that goes on when you chew them. And then there is their appearance. I don’t want to be a fungal hater and hounded as discriminatory towards them, but they do look quite gross, especially the big fat portobello mushrooms with their gills – I mean they don’t need to breath, so why those disgusting, liney things on the underside. Don’t get me started on wild mushrooms and shiitake, I reckon that’s the equivalent of munching through the BFGs ears. All that being said, I don’t want to disappoint the hubster. Every shop I do I am interrogated as to whether I have got mushrooms or not….I have a shop coming shortly and he will have to wait and see….

A large handful of mushrooms 

2 cloves of chopped garlic 

Fresh thyme 

Pinch of Salt and pepper 

Wholemeal bread.

Fry all off together.

Butter a hot piece of bread and place the mushroom mixture on the top.
