I struggled to be a nice mummy today my ear is making me feel right miserable and my children spend their entire lives fighting – oh and poppy found a massive bag of their Christmas presents this morning as well. I was a little unhinged and cried. I think I still looked unhinged on the way back from drop off, I walked with my neighbour and she insisted I drank lots of tea with her!
I haven’t had much energy to cook today so grabbed a few bits from the fridge and came up with these beauties!
I think they are quite festive actually!
500g chestnut mushrooms
3 cloves garlic
1 tablespoon chopped thyme
100g grated Parmesan
Olive oil
Salt and pepper
2 teaspoon of bouillon
2 red onions
3 tablespoons chopped hazelnuts
1 pack of ready roll puff pastry
1 Egg to paste on top
Preheat the oven to 180 degrees centigrade
Whizz up the mushroom, garlic and onions in a food processor until they are fine but not pasty.
Add the mushroom mixture thyme and bouillon to a pan and cook until there is no liquid.
Cut 6 large circles with a pastry cutter into the puff pastry
Then score an inner circle about 1/2 cm in but don’t cut all the way.
Brush over each circle with egg wash
Heap the mushroom mixture within each circle.
Sprinkle Parmesan onto each followed by the nuts
Place in the oven for 15 -20 minutes
