My earache is out to get me – it hurts so much I can’t shut my mouth fully as my jaw kills. It’s damp and cold out there and I ventured into the world to do some Christmas shopping. When I got home I needed warming up and I wanted to eat something that wouldn’t hurt my ear – soup it was. Warming and none chewy so my mouth had little work to do and my ear didn’t have any crunching noises to contend with!
This is soup has a subtle yet refined flavour – I love it but my husband says he struggled to taste cauliflower- clearly I am a super taster and he is not!
1 x 900g bag frozen cauliflower
3 celery stalks
1 large potato
1 1/2 pints of veggie stock
1/2 teaspoon salt
1/2 teaspoon pepper
700g 1/2 fat Creme fraiche
120g really strong cheddar
2 tablespoons of roasted, chopped hazelnuts
50g bacon lardons – fried (optional)
In a large stockpot add the cauliflower, stock, potato and celery. Simmer until all soft and ready to be blitzed.
Use a blending stick to purée all the ingredients. Then add the Creme fraiche, cheese, salt and pepper and stir well with a spoon until everything is mixed well together
In another pan. Roast the hazelnuts and then the bacon.
Ladle the soup into bowls and sprinkle the nuts and bacon on top.
