Well it seems to have been one of those days today, full of rain, cold and bleakness. These kind of situations call for a nice cup of steaming tea and a super soft cookie…… I haven’t been doing much baking over the past few months and resorted to buying a packet of biscuits with my weekly shop. I have genuinely struggled to find any that actually taste good. If anyone can recommend any nice cookies that would be fab. I am a total snob when it comes to this area, I always think I can do better making my own than your massed produced bourbons or custard creams. But I know plenty who love ‘em so good on you for not being as fussy as me!
Now for the recipe
125g butter or dairy free alternative
115g muscovado sugar
110g caster sugar
1 egg
1 teaspoon vanilla extract
200g dark choc cut into big chunks
220g self raising flour
2/3. Teaspoon salt
Preheat oven to 180 degrees centigrade
Weigh all ingredients and put them in your mixer.
Beat for about a minute
Line a grease proof baking tray
Roll into walnut size balls
Put them apart so they don’t spread into a massive cookie on your tray
Bake for 8 mins and take out immediately for the soft Millies type of cookie
Leave to cool slightly before shoving them in your mouth!!!
