I am all about using up what we have in the cupboards and not spending much time on weekdays cooking.
Winner, winner chicken dinner is all I can say! My kids love poultry, no matter how it’s cooked, but for some reason they like things on sticks, I reckon they feel like they are grown ups sampling something exotic!
Everyone has hummus in the fridge don’t they? I mean we usually don’t have just one tub but a couple of half eaten opened pots lurking in the fridge behind the yoghurts. Hummus is really versatile you can do loads of things with chickpeas and tahini, not just spreading it inbetween 2 slices of bread.
500g chicken
1 tub hummus
1 teaspoon cumin
1 teaspoon harissa paste
1 teaspoon sweet chilli sauce
Pinch of salt
Teaspoon lemon juice
Seasons seeds
Wooden skewers
Chop the chicken into pieces
Mix all other ingredients in a bowl except sesame seeds.
Coat each piece of chicken in the mixture, poke the meat on to a skewer.
Place in an ovenproof dish and sprinkle with sesame seeds.
Repeat the process until all the chicken is used up.
Put both ends of the skewer on the side of the tray so the chicken is slightly suspended like the table football men!!
Bake in the oven for 30 mins at 180 degrees. Until the chicken is cooked through and the sesame seeds golden.
