‘Tis the season to eat Jerseys! I must admit we are not really a tatty type of house hold except for roasties at Christmas, jackets in the winter when I am lazy and Royals round about now!! They go so well hot or cold and I usually make a big batch and stick ‘em in the fridge. My fav meal (hopefully on the menu tomorrow) is Jerseys with salmon and watercress salad yummy! Maris pipers again are another winner but I don’t buy them as have been conditioned in to thinking too many carbs = bad. I am slowly getting my head round to everything in moderation.
This is the easiest and quickest thing ever. You can cheat – which I mostly do or if you are dairy free go for the slightly longer version!
1kg jersey royals
50g lurpak garlic butter – for cheats
5 tablespoons olive oil and 2 crushed cloves of garlic – vegan options
A large bunch of finely chopped dill
Large twists of freshly ground salt
Boil potatoes until cooked
Drain off water
Add all ingredients
Enjoy!
