Anyone fancy a Kugelhupf? Of course you do!! It’s basically an enriched dough with whatever you fancy putting inside, then sticking it in a bundt tin.  Imagine a Panettone but a different shape.  I really enjoy making enriched doughs. They are so easy yet taste fantastic and with fresh yeast, oh my word it takes things to a whole new level!!!!  I have gone festive with cranberries, chocolate and nuts but you can be creative!  There is little work but the end product looks pretty impressive and tastes  AMAZING!

  • 150 g Dried Cranberries
  • 3 Tbsp Raspberry liquor
  • 18g fresh yeast
  • 275 g Plain Flour
  • 35 ml Lukewarm Water
  • 1 Egg
  • 40 g Caster Sugar
  • 1 Tsp Salt
  • 70 g Butter softened
  • 75g dark chocolate chips
  • 75g pecan nuts
  • 75 g White Chocolate  chips
  • Icing Sugar for dusting

Place the cranberries in a bowl with the raspberry liquor and leave to soak over night

The next day…..

Activate the fresh yeast with a teaspoon of sugar until it’s turned to liquid or just use dried but fresh has a nicer taste

Put all ingredients into a stand mixer excerpt the cranberries, choc chips and pecan nuts

Knead for 8 minutes

Then place in a warm place for 2 hours to prove

Then remove the dough fold the cranberries and choc chips into the dough and knead.

Place the pecan nuts at the bottom of the tin and make the dough in the shape of the sausage and place in a greased bundt tin for another 2 hours to rise

Preheat oven to 175 degrees centigrade and bake for 20 – 25 mins until a skewer comes out clean
