What better way To celebrate #nationalchocolateweek on a Friday than to make a chocolate loaf cake! I mean it’s a no brainier, right? I am all about the freeze dried strawberries and raspberries, they look so cute as a decoration and more importantly they are absolutely delicious. 

175g softened butter

175g brown sugar

3 eggs

200g self raising flour

1 teaspoon baking powder

110ml buttermilk.

4 tablespoons cocoa powder

1 teaspoon vanilla extract

200g dark chocolate chips

8 freeze dried raspberries 

White chocolate chips to decorate 

100g melted dark chocolate 

Preheat oven to 180 degrees C

Mix all the wet ingredients together, 

Mix the dry ingredients together 

gradually add the wet to the dry – I do this in a Kitchenaid due to laziness but you can easily do it by hand.

Line a 900g loaf tin, pour in the ingredients and bake for 1hr 10 mins. Poke a skewer in to see if cooked. If it comes out clean then you have yourself a perfect cake.

Melt the chocolate – i do this in the microwave for 1 min. 

Pour over the top of the cake and sprinkle with the choc chips and freeze dried raspberries
