Amongst family and friends it is a bit of a joke to ask what I had for dinner at a pub or restaurant. As it used to always be “the burger”. Since I have stopped eating meat I rarely go for the veggie burger, most of the time they are bland or filled with a horrible sauce.

I am all about the bread – I could, in fact enjoy pretty much anything if it was wedged in between 2 carby doorstops! Bread is definitely my downfall.  I really had the urge the other day to satisfy my burger craving – this was totally fulfilled by my blue cheese mushroom burger. So nice and full of flavour. If you didn’t want all the bread you could just eat them like stuffed mushrooms.

I love layering up a burger, and yes they go definitely need gherkins!

2 portobello mushrooms

3 tablespoons half fat

Crème fraîche

150g Stilton

1 heaped tablespoon breadcrumbs (ready made is easier)

1/ teaspoon salt

1 crushed cloves garlic

Preheat oven to 180 degrees centigrade

Place the mushrooms in a baking dish so they are upside down.

Mix all ingredients together until you have a smooth mixture

Pull out the mushroom stalks and fill with the blue cheese

Bake in the oven for 15 – 18 minutes
