You may be forgiven for thinking it was October today, grey, miserable and rainy but weirdly warm. I have been craving something nice and fresh for lunch but not to warning because of the weather and thought a tomato type of soup would do the trick For me tomatoes and basil are definitely a summer combo. You can not beat that sweet against the cold, creamy mozzarella – mmmm!! I always have a cupboard stacked full of cans of tomatoes and an assortment of beans. Hey presto, a simple tasty little snack, healthy and low in calories too. Making soup can seem like such a chore but never really is that bad and the results are far better than any supermarket fresh varieties
1 can of good chopped tomatoes
1 can of water
1 vegetable stock pot
3 cloves of crushed garlic
3 teaspoons of green pesto
Olive oil for frying the garlic
Finely chopped fresh basil
1 can of cannellini beans
Fry the garlic in the olive oil until cooked then add all other ingredients and simmer for 5 mins.
Serve piping hot
