Seems like all I do right now is make biscuits. They seem to spectacularly disappear at an alarming rate.
If you like white chocolate and you like vanilla – these are definitely the thing to try. With a crumbly, soft texture and occasional chunk of choc – they can be justified at pretty much any time of the day. Enjoy
Top tip.
- Don’t over cook or you will loose the texture. Take them out when they are going golden round the edges
- Freeze dried strawberry chunks would also be lush if you have them.
300g self-raising flour
15g icing sugar
100g melted white chocolate
1/2 teaspoon salt
2 teaspoons vanilla extract
150g unsalted butter (room temperature)
100g stork margarine
125g caster sugar
100g white choc chips
Preheat oven to 170 degrees centigrade
Mix all ingredients in a bowl, use a wooden spoon or mixer to form a dough.
Grab an ice cream scoop and scoop out on to a baking tray with parchment.
Leave gaps in between
Place in the oven for 12 – 15 mins
