These beauties are a great lunchbox snack for kids – since first making them my sprogs are obsessed.  The great thing is that they have no clue they are eating cauli which pleases me greatly. They both love it anyway actually but I love being able to fool ‘em into thinking they aren’t eating veggies when they are! Please buy the strongest cheddar you can. This recipe is  all about the flavours as cauliflower can be quite bland unless seasoned well. We all know that cauli and cheese are best friends so what could be better than cooking up a bite size combo of them both!

Top tips

  1. make sure your cauliflower is very dry before using.
  2. I purchased already riced cauliflower as I am lazy but you can absolutely do it yourself
  3. Use very strong cheddar to give flavour

600g cauliflower rice cooked and squeezed of all water

100g extra mature cheddar – with a real strong taste to it

1 heaped tablespoon finely grated Parmesan

1 teaspoon mustard

1/2 teaspoon dried herbs

1 teaspoon cornflour

2 tablespoons panko breadcrumbs

Once your cauliflower is cooked, riced, drained and dry. Grab a big bowl

Place all ingredients into it except the breadcrumbs, you will need your hands for this to mix it all together and to form the shapes

Grab yourself a cookie cutter of any shape and mush the mixture down into it and then try and remove with the shape remaining

Place on greaseproof paper and sprinkle with the panko breadcrumbs.

Place in the oven for 15 – 18 mins or until golden.
