Hummus is a staple with us, we eat tonnes. Don’t get me wrong I always have a shop made tub in the fridge but I do like to make my own sometimes.

I think the texture and flavour is a personal thing with hummus. You can add as much or little of lemon, thyme, garlic or sundried toms.

Charlie just had it with pitta for his supper and said it was very tangy and tasted like pizza. It has more of a tahini flavour than the ones you get in supermarkets.

Ingredients

1 can chick peas

3 tablespoons tahini

10 sun dried tomatoes

1 tablespoon chopped thyme

1 clove garlic

1/2 lemon zest

1/2 juice lemon

3 tablespoons Oil from sundried tomatoes

Pinch Salt

Pepper

Water to loosen the hummus up

To make this you will either need a nutribullet (or equivalent) or a food processor.

Place all ingredients except the water in the blender and blitz up until a paste is formed. You will need to loosen the hummus up, so add as much water as you need to make the texture you desire.

Also, you may want to add more salt, pepper, thyme or lemon juice to suit your taste.

I serve in a bowl with some roasted seeds, sundried tomato pieces and a drizzle of olive oil.
