Injecting some brightness into our dull days right now. No reason to buy salsa in a jar – it is never fresh and zingy as it should be. So quick and so simple. No unusual ingredients, give it a go!

This is the easiest recipe – you bung everything into a food processor and blend to the desired texture.

Top tip

1 don’t over blend or you will get gazpacho !!!

2 once you have whizzed it all. Leave for 30 mins. Grab a sieve, pour the salsa in and let the juice drain so it’s thicker and less watery.

1 can of good quality tomatoes

1 large red onion

2 garlic cloves

6 medium good quality vine tomatoes

5 sundried tomatoes

1 red chilli – optimal

1 teaspoon cumin

1 teaspoon smoked paprika

1 lime juice and zest

Salt to your taste
