We were invited to a lovely Diwali party today. I made millionaires shortbread, I haven’t baked it in a while. As a child experiencing it for the first time – I thought it was so special and  the most decadent thing I had ever eaten. I remember the moment exactly when I discovered it. There was a cafe in our town it was in the local theatre and they did the most amazing hot sausage rolls, hot chocolate and shortbread.  We only went to this place a handful of times and I remember seeing it on the counter under a glass dome, stacked up and wondering what it was. Each slab seemed massive at the time. I think I asked my mum how to make it, she didn’t know but said it was very tricky.  After having an epiphany moment only recently realising it’s just shortbread and caramel with chocolate drizzled on top I now make it for special occasions!

This makes 12 

Preheat oven to 170 degrees centigrade 

For the shortbread 

125g butter 

55g  sugar

180g Flour

Pinch of salt

Add all ingredients to a mixer or a bowl and mix until a dough is formed

Get one of those mince pie baking tins – can’t think what they are called!

Divide the dough into 12 and place in the bottom of each pie hole! Flatten until it covers the bottom and then place in the oven for about 8 mins 

Once slightly golden remove from oven to cool

For the caramel

100g butter

100g light brown sugar

 2 cans of condensed milk 

Large pinch of salt.

Add all ingredients to a pan, use medium heat to dissolve the sugar and melt the butter 

Bring to the boil, stirring all the time, then reduce the heat constantly stirring, for about 5-10 minutes until the mixture has thickened. 

Pour over the shortbread and leave to cool.

Melt 200g of chocolate in a bowl in the microwave (keep checking every 30 secs) until it’s melted 

Then pour on top of the caramel.

If you want to be posh melt a bit of white chocolate and flick over the top.

Leave to cool
