I would call myself a flexitarian – and it’s such a hot topic I don’t want to go down the road of the ethics of meat eating. I only buy free range organic chicken, because I am able to and it’s my choice.  Buy the best produce you can afford! I don’t eat any other meat.

My goodness these skewers are amazing. They really have that amazing Mexican taste with the chocolate. Children always seem to enjoy things on skewers, so mine are all over them.  So quick to make, kids can do it too. They cook quickly and taste amazing

Top tip

  1. add chilli powder if you are in a kid free zone
  2. Don’t over cook the chicken or it will dry out!

3 Chicken breast cut in to strips

1 or 2 tablespoon sesame oil

2 tablespoons cocoa powder

2 cloves crushed garlic

2 teaspoon smoked paprika

Large pinch of salt

1/2 teaspoon chilli powder (optional)

A load of sesame seeds

Grab yourself a ziplock bag or a shallow bowl.  Place all ingredients inside except the chicken

Cut the chicken into strips.

Add to the bag and massage the mixture in to the chicken

Seal the bag or leave a cover on top of the bowl and put in the fridge for an hour or so.

Bring out and thread each bit on to the end of a skewer so the wood runs all the way vertically up the chicken.

Drizzle sesame seeds on top

Preheat a griddle add some sesame oil as it has a higher burning point

Place the skewers in and cook around 4 mins on each side.

Check your meat is cooked through before eating.

If the centre of the chicken is sticking to the skewer it is likely to be cooked

Enjoy
