I love creating quick and easy bakes. These cookies take as much time to make and bake as it does popping round to the shop. They taste great and are a really fun winter / inside activity to do with the kids. Short and buttery – amazing with a cup of tea!
250g butter
110g Sugar
360g plain flour
Big grind of salt
35g cocoa powder
1 teaspoon vanilla extract
Preheat oven to 190 degrees centigrade.
Mix all ingredients together in a stand mix until a dough is form.
Divide the mixture in half. Add vanilla to one half. Mix well.
Grab a bowl add cocoa powder to it. Mix well.
Place each in the fridge covered for 30 mins
Roll each dough out to about 1cm thick
Choose cutters you like, and a smaller for the middle.
Cut out the shapes and swap each colour round for the contrasting centre .
Place on lined baking trays and cook for 10-12 mins
