I like to keep it simple sometimes and this recipe is just so easy.  Spätzle is available often in Lidl or Aldi – it’s like a dumpling noodle I suppose. Because it’s made of egg you don’t need fancy sauces or to give it great flavour a good knock of butter, salt and pepper and you are looking at something delish.

I don’t even need to give measurements for this as it’s so thrown together.  Half a pack of noodles, tenderstem broccoli, cooked and cut in to pieces, a large knob of butter, salt, pepper, chopped, almonds, olives and a chilli.

Cook the Spätzle – once soft, drain the water and add the butter to melt, salt pepper and all ingredients. Chuck some mozzarella on top – eat boiling hot!
