These may be the ramblings of a mad woman, I have just today really recovered from our week of plague in the house. the last few days I haven’t been able to do much, let alone cook. I feel like I haven’t had enough adult company and may be going slowly crazy! It was my husbands birthday last week amongst our germ infested house and so didn’t make a cake. Yesterday was, cold wet and dreary and definitely the kind of day for eating stodge so I baked a belated cake.
My mum is german and I have grown up on apple cakes, in all differing forms, some with almonds, highly spiced, puff pastry, tarts you name it we have had it. I never tire of anything apple though. My husband loves cinnamon too and I wanted something autumnal. I don’t often make traditional adult birthday cakes and this one is no exception. I hope you enjoy, much of it had been consumed by the end of the day.

For the cake
3 eating apples, cored, peeled and cut in to slices
125g/4½oz butter at room temp
140g light brown sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon mixed spice
5 tablespoons butternmilk
3 eggs, beaten
225g plain flour
2 level tsp baking powder
½ tsp salt
Vegan salted caramel sauce
1 can coconut milk
300g brown sugar
Salt to your taste
1 teaspoon vanilla extract
50g butter or dairy alternative
Preheat the oven to 180 degrees C
Prep the apples by coring, peeling and cutting into 1/2 cm slices thick. Put to one side.
In a bowl place all the dry ingredients together and stir until they are mixed well (I use my KitchenAid)
Then slowly add all the wet ingredients and beat until you have a pale, batter
Grab a 23 cm round baking tin, line and grease.
Pour the mixture into the tin and place all the apple slices on top in whichever pattern you like
Then, over the top scoop out 3 tablespoons of my vegan salted caramel and place it evenly over the top.
Place in the oven and bake for 45 mins. The cake should appear golden and a skewer should come out clean when you poke it in the middle.
