Ok, stick with me – this may all sound a little bit weird but trust me, you will love it. Ok so, what we are dealing with is a biscuit outer shell rather than pastry and a chocolate and mincemeat filling. Indulgent, yes, low in calories no. I always like to try and move away from the traditional mince pie to something a little different and these definitely deliver on this front whilst also providing oodles of festive flavour!
Very easy to make and you can absolutely set the kids a task to make ‘em independently
210g plain flour
100g sugar
340g butter at room temp
1/2 teaspoon salt
1 teaspoon baking powder
1 egg
200g mincemeat
Nutella
Icing sugar for dusting
Preheat oven to 180 degrees centigrade
This couldn’t be easier.
Place all ingredients together in a stand mixer. apart from Nutella, mincemeat and icing sugar.
Pulse together so you get a crumbly mixture
Grab yourself a mince pie Tin
Leave back a third of the mixture.
Use your hands to scoop some of the mixture and pat it into moulds to form a pastry crust as if you are making mince pies. Then spoon a little dollop of Nutella into each biscuit case add mincemeat on top. Put some of the reminding mixture on top as if you were making an apple crumble.
Place in the oven for 15 minutes
Leave to cool before removing from the pan or they will just fall apart
Sprinkle with icing sugar.
