I am doing 3 lunchboxes every day at the moment and coming up with new and inventive stuff everyone will eat is hard. There are only so many sandwiches I can make and wraps I can fill before I am told how boring they become. Queue my muffins. They are a cross between a scone, a muffin and bread. Sooo delicious, the basic recipe you can use and then add what you want for extra flavours. They have super, finely cut chorizo tucked away inside as well as herbs and cheese. My kids and husband love ‘em!

Spinach – cooked and drained of water
Finely chopped broccoli

Blue cheese
Bacon lardons
Makes 15
150ml sunflower oil
350ml Greek yoghurt
1 egg
1 teaspoon mustard
500g self-raising flour
160g vintage cheddar, grated
4 tablespoons finely cubed chorizo
100g cubed feta
4 chopped sun dried tomatoes
25g parmesan for sprinkling on top
I teaspoon finely chopped thyme
Preheat oven to 200 degrees centigrade
Mix all ingredients into a mix except the Parmesan until it is sticky
Grab some muffin cases whack a good spoonful into each
Sprinkle the Parmesan on top
Bake in the oven for 25 minutes.
