Soup always fills me up and I don’t like buying it. The taste is never great and I mostly walk away feeling disappointed!
That being said, sometimes I fancy a warming bowl of it soup but can’t be bothered with the faff of it all. I have definitely got that covered with this recipe. It’s so simple and very good for you! You can literally whip it up and eat it in minutes.
1 jar of 460g roasted red peppers
6 green olives
4 tablespoon pasata
2 teaspoons double cream
3 tablespoons water to loosen it up
Large pinch of dried basil
Place all ingredients into a blend and blitz to the consistency you like.
Pour into a pot, placing a lid on top and heat until bubbling
I serve with a few roasted seeds and Parmesan shavings
