It’s been freezing lately. My lovely friend Sara is over from America and we were up at 5am going to see a Freda Kahlo exhibition and doing tourist things in the city. I never get to be a tourist in London so it was fun!
We did lots of walking, it was tiring and cold so when we got home I jumped in a hot bath and chucked a load of stuff together for a one pot supper job! It probably took about 3 mins from finding all the stuff to sticking it in the oven!
3 cans of cannellini beans
2 cans of butter beans
1 bottle of passata
Olive oil
2 cloves of finely chopped garlic
1 tablespoon Bouillon
18 small sausages (I used Moroccan inspired Tesco finest)
30 black olives
1 tablespoon fresh chopped thyme
Preheat oven to 200 degrees centigrade
Place all ingredients in a large roasting dish or low casserole dish, drizzle olive oil on top and place in the oven for 1.15 hours
I serve with a little sprinkle of strong cheddar.
