We were out all day with friends playing crazy golf would you believe! I lost track of time and realised I’d not even thought about supper. In these situations pasta is always my go to plan. So without fail out came anything we had in the cupboards which resulted in a not so healthy but oh so delicious dish. Given that everyone had seconds, I think it was a success.
500g Gigli or any shape which goes down well in your house!
3 tablespoons mascarpone
1 tablespoon chopped garlic
1 tablespoon chopped thyme
250g bacon lardons
A load of olives
20 cherry tomatoes
Olive oil
Salt and pepper to taste
Ball mozzarella
100g vintage cheddar
Heat the olive oil and fry the bacon, garlic, thyme and tomatoes. Fry until bacon is nicely cooked.
At the same time boil the pasta
Once the pasta is cooked drain the water off keeping the pasta in the same pot.
Add the frying pan ingredients and then stir in the mascarpone.
Add the olives and season to your liking.
Break the mozzarella up and place on the top along with the grated cheese.
Shove under the grill until golden on top
